Lemon Bars!




It's been UNSEASONABLY warm and sunny for the past week or two - yay! We've been grilling out A LOT, and today was no exception.  We had my in-laws over for lunch, and I flipped through my binder until I found the perfect dessert: Lemon Bars! What's sunnier than lemons?  I used to make these often, using a mix, but just started making them from scratch in the last year; the recipe is pretty simple. Lemon Bars

1 1/8 cups flour
1/3 cup confectioner's sugar
1/2 cup butter, softened
2 eggs
2/3 cup confectioner's sugar
1/3 cup fresh lemon juice
1 1/2 tsp. grated lemon zest
1/4 tsp. baking powder

Preheat oven to 325 degrees.  In a medium bowl, mix together the flour, 1/3 cup of confectioner's sugar and butter, until the butter is in very small crumbs.  Press into the bottom of a 11 x 7-inch baking dish.  Bake for 25 minutes or until firm and lightly browned.  While the crust is baking, whisk together the eggs, 2/3 cup confectioner's sugar, lemon juice and lemon zest.  Just before the crust is done, stir in the baking powder.  Pour over the crust while it is hot, and return to the oven.  Bake for another 25 minutes, until set.  Dust with confectioner's sugar when cool.
